Green Tea & Pumpkin Apple goodness...

Okay, so I am so excited to announce to you all that I am an Aunt again. Lucuis Malcolm was born yesterday. Yeah!!! I want to visit DC and see the babies so bad but have no idea how to pull it off. Must brainstorm.

So, I've just slid another batch of Pumpkin Apples cookies into the oven. Yes, I am crazy to be cooking in my house with a broken air conditioner on a night like tonight. Well, its much better than yesterday. This last few weeks have been winners (and I mean that in only the most sarcastic sense possible) involving lost keys at a gass station, 110 degree heat, a baby strong out on benedryl who redefines hyper, ect. So, to top it all off, I decided yesterday to make cookies.

Whenever I go to the health food store, I usualy treat myself to a cookie from the Alternative Baking Company which I LOVE but I can't share them with Willow becouse, although they lack milk, they have soy. I decided to try their Pumpkin Spice cookie which I ended up not caring for. Too much of some spices not enough of others or something. Anyways, I had ths brainstorm yesterday that I needed to learn how to make my own vegan cookies so that I could share with Willow and not have any worries. I modified this recipie, put the first batch in and waited. They smelled pretty good but they never seemed to get done and the whole wheat flour I used overpowered everything. They were awfull; absolutely, positively awfull. It just sent over into this downward spiral of despondency.

Today, i decided to fight back and try again. I keep many of the same elements but broke down and used egg. They are very, very yummy! Success!!! Tomorrow, I can take the cookies over to my moms and not worry if Willow grabs a piece from one of her cousins. Plus, tonight I went trolling and found a whole bunch of vegan cookie recipies. Next week, I might try oatmeal.

Here's the recipie if you're interested:

Type your cut contents here. 1 small can cooked pumpkin
1/2 cup spiced apple butter*
1/2 cup packed brown sugar & 1/2 cup white suger!
2 eggs well beaten

Mix well in large mixing bowl.

Shift together in smaller mixing bowl:
2 cups all purpose flour
3 teasponns baking powder
1/4 tsp ground ginger

Slowly incorporate flour mixture into pumpkin mixture. Mix well. Drop dallops onto greased cookie sheet and bake in preheated 350 oven for 10 minuets aprox. or untill slightly golden brown around bottom with top looking set. Enjoy.

*I made sure to read the lable of the apple butter to make sure it didn't contain any added ingrediants. 100%apples & spices
!the first time I made these I used 1/2 cup packed brown sugar with 1/2 cup maple syrup. Then I read the maple syrup lable. Next time I will use only 100% natural maple syrup
