Saber is a straight-off independent and serious person, focused on her goals and definitely isn’t about to let anything get in her way, which isn’t a really hard feat considering she IS Saber, the strongest Servant in the Holy Grail War, who can kick twenty kinds of asses without breaking a sweat (A little exaggerated maybe, but hey, the point gets across). She seems emotionless but that is just her facade in order for her to concentrate on her wish to win the Holy Grail War. Having been brought up as a knight, she is polite and chivalrous, both in and out of the battlefield, as she prefers head-on confrontations to underhanded tactics. While she has no problems interacting with majority of people, she can be a bit awkward in matters pertaining to her femininity, which she considers secondary to her status as a warrior. This is brought up a lot in the Fate Route, especially after she and Shirou become aware of their romantic feelings for each other, and she is shown to be unsure of how to deal with the situation. Due to her reputation and status, Saber has quite a pride, and refuses to give up a fight or let herself be saved by someone she is supposed to protect (Ahem!). She would not hesitate to protect her Master from harm as with the codes of knighthood that she follows.
Despite her strength, she still believes herself a failure of a king for her beloved Britain, because it fell to ruins and she considers it her fault. In her moments of death, her wish is not to save herself but the fate of her country, by wishing for time to go back where someone else more worthy would lead the country; this shows that she indeed does care a lot for people or everyone and everything she considers precious to her to the point of selflessness.
Interestingly, Saber is shown to have an affinity for small and cute animals. In a flashback of her past life, she was shown to have taken care of a lion cub with great affection. This is one of her softer sides that she rarely shows to other people. It could most likely extend to Pokemon. Despite her seeming indifference, she can be kind and caring. She enjoys eating good food and is very grateful to those who would provide her with it.
In the Fate Route of the Visual Novel of which she is the heroine, majority of her character issues were dealt with, such as her apparent lack of concern for herself, the nature of her wish to change the past as opposed to looking forward to the future, her inability to forgive herself for her failures and even her very own perception of herself: from a powerful warrior to just simply being a woman at heart.
Strengths/Weaknesses:
Saber's sword-wielding skills are excellent, and this extends beyond her trademark sword Excalibur, as she is shown to wield a kendo stick with equal skill (and still kick ass). Being a warrior, she has good physical strength also and does not easily get tired even during battles. She has quick reflexes and quite agile, though not at the same level as Lancer.
Personality-wise, Saber is quite balanced in positive and negative. Outside battle she is generally reserved and quiet, not speaking unless spoken to. She speaks in a polite manner to civilian people. She is patient unless provoked, and enjoys beautiful scenery. But as Servant Saber, she is very straightforward and does not hesitate to draw her sword against any hostile people. She refuses to give up battles, preferring the philosophy of fighting with honor to the end. While admirable, this works against her when it comes to people who fight dirty.
One particular aspect of her personality that was shown as her weakness in the Fate Route was her inability to forgive herself. She places too high expectations on herself, and if she fails, she blames herself. She strives to live up to her reputation as a hero, as the legendary King Arthur, and while she certainly can do her best, she still has limits as a human. She regrets her failures and would strive to correct them without a care for her wellbeing. Similar to her Master (it's implied more than it is stated), she has a sense of selflessness in a not-so-good way. She cares not whether she dies or is wounded to the verge of death just to protect her Master. While certainly noble, it does provide frustration for those who try to save her.
Most likely because of her reserved nature, she prefers to keep her opinions to herself most of the time. She'd rather endure people's misconceptions about her actions in silence than confront them about it, unless it is something that greatly irks her principles or self-perception (at which she'd have no problem drawing her sword or throwing an angry glare your way, Shirou) . Also, since she shuts out her emotions for the sake of concentration since her King Arthur days, she's inexperienced in the matters of love and normal teenage life.
Saber dislikes being treated as a weak, helpless girl, due to her having such a high pride as stated above. Rarely would she ask for help, preferring to do and figure out things with her own strength, sometimes just to prove herself.

[Saber is fiddling with her Pokegear. She's turned it on.]
"This looks similar to the telephone in Shirou's house... I suppose it functions similarly."
[There's a sound of shuffling and later, a Cubone's happy cry is heard. Saber just petted it on the head.]
"... Is this really a place so far from Fuyuki? Then maybe Shirou's not here. And the War as well... I have to try to find a way back as quickly as possible! Rin was badly injured. Gilgamesh might... Shirou might be in danger."
[The Cubone whimpers in response.] "Ah no, I don't mean to leave you behind, little one. Sorry if I made you upset." [She gets a considerably happier Pokemon cry in return. Then she sighs].
"This certainly is a dilemma..."
Third Person Sample:
It wasn't really hard adjusting to the environment, the blonde warrior thought. It was not that much technologically advanced compared to the era that Shirou was in, and while she had to take longer to learn about the gadgets she was given when she suddenly ended up in this strange place, she eventually mastered it.
Just like she had with the sword.
At that notion, her hand involuntarily twitched as if the appendage itself was yearning for the comfort provided by gripping her holy sword. But as things were, she did not have it here, and from what she had learned, it was highly unlikely she'd get it back soon. So now, she was no different than an ordinary human in terms of both power and existence. She didn't know whether she should be glad about this fact or not, but she let it go for now.
Saber quickly turned her thoughts back to the battle. It was really hard when she wasn't the one fighting, since that was what she was used to. But she had this little creature following her and fighting for her. It was somewhat unsettling but she had no choice. And it was not like she was of no help to the young Pokemon.
"Now!"
The Cubone swung its bone club, aiming for the enemy Teddiursa's forehead crescent mark. However, the small bear was able to dodge just in time. But the relief was only momentary, because, with a determined glint in its eyes, the ground type turned full circle and in its rotation, hit the bear Pokemon with the back of the bone it held, the momentum and weight sending Teddiursa crashing to the ground, knocked out by the powerful Bone Club attack.
Saber's eyes widened at that maneuver. That had been her movement during one of her sword self-trainings, though she was not using an actual sword. Cubone turned to her with a triumphant look, waving its bone club happily.
Could it have picked that up by watching her?
She didn't think that the Pokemon could learn sword techniques.
