Gluten-Free Brownies of Awesomeness!

Dudes, I have made the best gluten-free brownies ever!! Back in the day, I used to make gluten-free stuff for a friend of mine who had Celiac's Disease. All the baked goods I made by combining things like rice flour and tapioca flour and such totally flopped. I had to use a mix. I don't like mixes. We still have a vacancy beneath us since our video game playing and karaoke singing neighbors left! Move here! We can eat dinner together every day!!

I feel so bad for S and her Lyme Disease! Thus far, every single "cure" has had terrible side effects. No cure is going to totally get rid of it b/c she's stuck w/ it now, but so many things she's taken have just made things worse. :(

Oh, bless you! My youngest daughter has coeliac disease and the packet brownie mixes are generally horrid. I'll give this one a try and check out the webpage you linked to as well.

I was so pleasantly surprised by the texture! Not grainy at all, and moist & chewy like you want a brownie to be. They tasted better than 90% of the gluten-loaded brownies I've made. So much better than the mixes! I think the key to this recipe is beating everything: beat the eggs well, then beat the brown sugar w/ the eggs well, then add in the chocolate/butter slowly and beat well, then add in the dry ingredients and beat well, and finally the vanilla and beat well. This batter goes through a workout! I hope your daughter likes them, too!
