Wires crossed and I didn't get word until this afternoon about the birthday party for
alexallison tonight at
radicalupstart and
leoshan's house. Turns out it's a vegan potluck. radicalupstart said I didn't have to bring anything since it was so last minute, but I happened to have soaked some beans last night and needed to cook them anyway, so I decided to use them for an adaptation of mujadara (Middle Eastern lentils/rice/onions mixture, seasoned with cumin). I used tepary beans instead of lentils. I also realized I didn't have any cumin (or I can't find my cumin - note to self, buy cumin!). So, I used some other similar spices, and it came out delicious! Here's the recipe:
in the bottom of a medium soup pot, saute 2 chopped onions in olive oil
add coriander, guaram masala, turmeric, black pepper, salt
separate out half the mixture into a bowl
add soaked tepary beans to other half of the onion/seasoning mixture
add water to completely cover the beans and onions, stir in more salt
add two cups brown rice, more water
bring to a boil
turn down heat, cover, cook on low until beans and rice are tender
turn down heat more, simmer until water is soaked up
top with the second half of the onion/seasoning mixture
Sorry there's very few amounts listed - I'm not good at measuring precisely - I just use "enough". Sometimes I end up mistakenly using "too much" and then I adjust the next time. ;D If you look up "mujadara recipe" on google, you'll find something with more precise amounts. Oh, and the original dish calls for long grain white rice.
