Heidi had some frozen shrimp that had been hanging out too long in the freezer. Inspired by a local Mexican restaurant, we figured out a way to eat these.
1 large bag shrimp, frozen
1 small package cilantro
2 limes
6-8 small flour tortillas
1 package guacamole or guacasalsa from TJ's
1 cup mushrooms, or other veggies
Thaw shrimp in fridge overnight.
In the morning, add shrimp to a bowl and squeeze lime juice over them. Leave to soak.
In the evening, de-tail shrimp and add more lime juice. Create tacos by filling the tortillas with 1-2 Tbsp guacamole, 5-6 shrimp, a pinch of cilantro, and additional veggies. (Mushrooms worked well.) Serve with a lime slice to garnish.
The combination of flavors is DELICIOUS!
