I cribbed this from a youtube video by The Cooking with Jack Show. Go watch this.
Mini pork pies
1 lb ground pork
1/2 a large onion grated (or just chop it up really really well. Mince I think is the word)
1/2 cup plain bread crumbs
2 slices of white bread soaked in milk (cut the crusts off if you want to)
1 egg beaten (I forgot this and it still was good)
1 teaspoon salt
pepper to taste (Use a lot)
Approx 1 teaspoon of sage
1/2 teaspoon thyme
1 egg beaten with 2 tablespoons of water
1 Box Pillsbury Pie crusts
12 muffin tin
Mix all the items up the night before. Moosh/Mush it all together really well. Cover with Saran Wrap and keep in the Fridge overnight (I did not do this but I should have)
Cut out 12 4 inch circles from the pie crust (I used a peanut tin) and 12 2 inch circles
Note: Life would have been easier if I had a 2nd box of the pie crusts because then I would not have had to roll out the leftover bits and pray I had enough. If you make your own pie crust you might not have this issue.
Fit the 4 inch circles into the pie tin. The edges should come to the top and out round the edges then fill with the pork burger/pork meatloaf mix to roughly level to the top. Place the 2 inch circle and pinch the edges together. Or you can be like me and fill in the gap with pie crust leftovers. brush the tops with the egg/water mix.
Bake at 375 for approx 30 min. Let rest approx. 10 to 15 min after finished. They are volcanically hot when they are done.
Eat. Needless to say, these are not low calorie.
