Oh... it sounds so yummy... Here is my concept on how to make it:
- Make a cheesecloth sachet with chunks of galangal, lemon grass & kefir lime leaves.
- Make the Tom Kha soup base, using the sachet instead of just adding the ingredients so they can be removed and discarded. (I think they won't be something you want in the final product...)
- Let cool.
- Cook rice noodles (the flat wide ones,) set aside.
- Mix quick-cooking tapioca into cold soup.
- Mix noodles, soup (with thickener), meat and vegies into casserole
- Top with crumpled crispy rice noodles (the thin kind) and bake.
