In an attempt to learn about offset smoker grills, we picked up a Char-Griller smoker on sale at Lowe's. Not only will this be good experience, offset smokers handle heat and smoke differently than my Kettle Grills, it doubles our cooking capacity. We will need it, too. Next weekend I've arranged to sell our BBQ Brisket and Pulled Pork at Galaxy Hobby for their Fall science fiction model contest. We will be set up from about 11:00 to 1:00pm. Which means I'll be up all night tending smokers.
One more Weber Kettle grill - a nice one with an integrated table - will be added to the mix this week (thank you Andrew).
We've already identified four BBQ sauces - North Carolina vinegar, South Carolina Mustard, a tomato-based medium heat sauce, and a fiery Chipotle sauce.
With only a few minor tools and set up gear, we are all set for the 2011 BBQ Competition Circuit in the Pacific Northwest.
It's exciting to be doing this, and I can imagine worse things than tending a fire day in and day out.
