Everything! Or... well, most things... large pictures definitely... possibly quizes, unless they're short... explicit stuff definitely... basically anything that most people who view it will just end up scrolling past anyways...
I think it also depends on where you are posting it... like, you should use LJ-Cuts more rigourously in a community than in your personal journal, but you could probably get away with rarely using them in a private or 'friends-only' journal that only a few people read...

Seriously, it's a bit limiting, isn't it? I can't write about sex either, for fear that you (my children) will all read it and become gay. Or nuns. Or gay nuns. Or gay nun clock tower snipers. Those things happen.
