I don't really have measurements. I prepared a bowl of mango pieces (I found that the supermarket sells frozen mango cubes. Those are useful because the first time I tried to do this with a fresh mango, I had a hard time cutting it and everything looked mushy in the end), a bowl of papaya, some garlic, and one chopped up onion.
I actually also made coconut rice so what I did was take a can of coconut milk, open that up, and skim off the "fatty" coconut milk that's at the top. I used the remaining milk to make the rice and the "fat" for the dish. (It's not really fat but I don't know how to explain it. It's almost like coconut milk cream.)
First I cook the onions and garlic together in a wok with a bit of olive oil. I added just a little bit of sugar to take the edge off the onions. Then I added in the fruits. I stir fried them for about 5 minutes to sort of get the fruits to soften as well as the juices going. Then I added in the coconut "fat". Stir fry for a bit to get everything going and let the coconut flavour sink in.
Then I put in the chicken and stir fry until everything is cooked~ <3
