this week, i've been particularly proud of my menuplanning. i cook a lot, but one of my weaknesses as a homemaker? i am far more recipe/taste driven, than budget-driven. like, i will want to make something and i will go and buy the ingredients. and if i only use a handful of parsley? well, then the rest of the bunch can go rot. the more postive spin on this, of course, is that i like to try new things!
anyways, this week was very self-contained in terms of groceries, and i derived a surprising amount of satisfaction from it. i'm hoping to continue on this trend.
dinner 1: grilled chicken, mushroom, goat cheese quesadillas on spinach tortillas. cherries for dessert. and i brought the leftovers for lunch the next day.
dinner 2: mashed pinto beans, with chili/lime/crumbled chicken chorizo sausage on french bread. topped with a little monterey jack cheese.
dinner 3: leftover chicken and mushrooms on a salad
breakfast 1: pinto bean/chorizo mash on grilled tortilla, topped with eggs scrambled with spinach and mushrooms.
breakfast 2: yogurt topped with cherries and kashi.
dinner 4: shrimp scampi (of sorts) over leftover french bread.
dessert 1: crisp made from leftover cherries and a couple of peaches. i had some leftover fresh rosemary from some other week, so i added a couple of teaspoons of finely chopped leaves to the crisp topping. verdict? delicious!
breakfast tomorrow will probably involve the leftover goat cheese. probably not the shrimp, though. and, to be perfectly honest with myself, will most likely consist of the cherry crisp. dinner tomorrow night will be tuna steak tosadas...using the leftover spinach tortillas! am also going to work out a pineapple/radish salsa...because i bought some pineapple today.
aaaaaaand, one last note on groceries. i also bought some ice cream to go with the crisp. however, i decided to try some ice cream made from goat's milk. totally delicious!! it definitely has that goat-y tang (i bought vanilla), but i find that it makes the ice cream perfect as an accompaniment, rather than the focus of a dessert. useful! plus, it's low-fat and i ended up being completely satisifed with about half the standard 1/2 cup serving. also useful!
