Recipe : 奶奶的算盘子 煮法

I have been pretty spoilt by my mother-in-law who always gave me her ready made Hakka abacus.  She will steam the yam, press and shape the mixture into little round abacus beads lookalike and passed them to me and my other sister-in-law.  Sometimes, she would even cooked them and gave it to me.  I had not eaten the Hakka abacus from many other places, but I can confidently vouch for Nainai that her's is definitely one of the BEST!

She had some ready made abacus and last Wednesday, I got her to show me how she cooked them.  There are many ways to cook these Hakka abacus, you can add minced pork or chicken with mushroom, but I prefer the ones without meat but with cuttlefish.

Ingredients:

Cuttlefish - 1 or 2 pieces, cut into tiny strips.
Dried Shrimps
Dried Mushroom, soaked and minced
shallots and garlic
spring onion and coriander
Hakka abacus



First, add some oil and fried the cuttlefish for 5 minutes or till you can smell the aroma.  Dish it out and add more oil...



to fried the shallots.  Have to be patient to fry these till it has smell and becomes translucent.



Add in the dried shrimps and garlic next, and the minced mushrooms.



Fried till fragrant and add in one bowl of water.


Pour in the abacus next and seasoned with oyster sauce, chicken cubes, white pepper.  See the Master Chef at work.  :P




Cover the wok for 2-3 minutes before we fried one last time.  The liquid will be absorbed into the abacus.



This is really one interesting and yummy Hakka dish.  K, next I shall master how to knead the yam into those abacus beads.
