I love making quiche - made this one yesterday and it was one of my more successful attempts. This recipe is for those who really love cheese. If you aren't as big of a fan of cheese or want to cut the fat and salt, I'd recommend reducing the cheese and adding a couple more eggs instead for filler.
I used a store bought pie crust - unrolled it at room temperature and put in pie pan. Used a fork to punch holes in the bottom and baked at 450 for about 7 minutes.
Then:
Saute 4-5 cloves chopped garlic and about 1/2 cup finely chopped onion with 1/3 cup butter.
Add one package frozen spinach - defrosted and drained. Saute for a few minutes.
Add one package of feta crumbles and about 1/2 cup cheddar cheese to spinach mixture. Fold into shell.
Mix three eggs and 1 1/4(ish?) cup of whole milk. Salt and pepper to taste. Pour over spinach mixture. Add another 1/2 cup cheddar on top.
Bake at 375 for 40 minutes or until center is set.
3 3/4 spoons. A little too salty, but that is easily rectified. We ate it with a small salad of romaine and cherry tomatoes with homemade balsamic vinaigrette, and some avocado slices and cantaloupe on the side. Awesome!
