The thing is, if its multi-chaptered how should I end a chapter? Ending it randomly would bother me, so maybe the fainted idea of a plot point perhaps, or cliffhanger here or there lol --Ending it is up to you. You know what you have in mind. Generally, an ending has to be organic to the story or the theme you are trying to express. Listen to your characters or let the plot naturally unfold to the conclusion. If you are suddenly inspired to do a twist ending, fine. It's still the fic "telling" you to.
May I offer a little advice? --I see in other comments you mention about finishing fics. I think it would really benefit you to make that a goal, even if means narrowing the scope of your project. Take a few notes on your current ideas and work on those first. Don't look at the forest, look at the trees.
Did you ever write anything or want to write something that was the most over-done concept ever? How did you get over that? --Over-done as everybody else has done it? I suppose that's why I like AUs, so I don't repeat what everybody else does. However Vampire!Wilson could be lumped into that category. lol. You know, fanfic should be fun, so if you want to try a trope, go for it and get it out of your system. Personally, I love first meet stories. I don't really write them, but I never tire of reading them.
My issue is avoiding melodrama. There are a few fics I wrote for myself and will never see the light of day. Sometimes an idea grabs me, but usually within three hours I realize the error of my ways, add it to my plot bunny list, then let go of it.
