Her reasoning for that unflattering haircut of making her look like someone her mother would call a whizzled-up old geezer? The belief that the back of her head is flat!!!

Believing her head is flat explains the bun. But the bang-flap style comes from Liz's offhand comment that Elly hasn't changed her hair since the 60s and Elly stopping the hairdresser halfway through his cutting.
I guess we will have to wait until January to find out whether somebody quietly updates 60s to 90s. But what will they replace "Peace an' flowers" with? Grunge?
