Peter Paige is on a carbohydrate kick.

"I am on a major, major food rebellion," says Paige, who plays flamboyant serial dater Emmett on Showtime's "Queer as Folk."

"After five years of eating to be naked on television or not eating to be naked on television, I am on a major food rebellion," Paige says over lunch. "I can't get enough bread!"

But the joys of a less-restrictive diet are infused with regret.

After five seasons of unabashed gaiety, "Queer as Folk" is calling it quits. The fifth and final season kicks off May 22 at 10 p.m.

It will be a season of watershed moments for Emmett. In the first episodes, he must decide whether he's going to stay in the house of den mother Debbie (Sharon Gless) after her boyfriend, Detective Horvath (Peter MacNeill), moves in.

There will also be guest appearances from Rosie O'Donnell and Cyndi Lauper.

The show itself was a milestone for television.

"I feel really fortunate that I can look back on this experience and know that it is more than just a TV show," Paige says. "Every time I get on an airplane, some straight guy grabs me and says, 'I love your show.'

"I was with a friend once and he said, 'Why? Why do you love 'Queer as Folk'? And the guy said, 'I just like the stories.' Think about what that means. This show for that guy has normalized the idea of two men and two women being in a relationship. That's huge."

Before "Queer as Folk" came along, three-dimensional gay characters were a rarity. Now they are part of the fabric of television. There was even a coming-out on "The Sopranos," that bastion of macho thugdom.

That's not to say that stereotypes are extinct. And Paige's Emmett is one of the show's fussier characters.

From the beginning, says Paige, "I saw a glimmer of something that I had never seen before on TV, which was an effeminate gay man who actually liked himself. Because most effeminate gay men are really shame-based. They're really self-loathing.

"But with Emmett, there's no self-loathing. He thinks he's pretty great. So I glommed onto that, and it was out of that that I made almost every decision about the character."

Then the waiter arrives to take the lunch order.

"I'll have the chicken focaccia sandwich," says Paige. "Oh, and is it possible to get some goat cheese on that?

"I told you, I'm not fooling around anymore. If it comes between two pieces of bread and it's greasy, I'm in!"
