You can do this without the cheese if you want it to be kosher. :) This is also paraphrased from a post I made in the cooking community a few years ago. :)
2 large white onions, cut up however thick or thin you want them butter/margarine/oil to sautee -- whichever you prefer 1/8 tsp thyme 1/2 tsp black pepper 1 bay leaf 2 cans beef broth (we use Campbell's 10.5 oz. or a box of the Swanson's broth) 1 can of water -- use beef broth can French bread Mozzarella cheese
Cut up the onions. Sautee them in your soup pot until they are golden brown but not carmelized. (They turn brown and sweet when you carmelize them so if you want them sweeter, go ahead and let them sautee longer.) Then add the thyme, beef brother, water, black pepper, and the bay leaf to the pot. Get it to boil and then let it simmer for like 10-15 minutes. Meanwhile, cut up the bread and the cheese. Make sure to stir the soup a bit while it's simmering... sometimes the bay leaf likes to hide but it usually comes back up after a little while. When you're done simmering it, put a piece of bread in a cup/bowl and the put in some soup (with many yummy onions) and put the cheese on top. I usually let the heat from the soup melt the cheese.
