BEEF BEER STEW WITH CHEESE DUMPLINGS

Mar 19, 2011 21:45

Made a bit of a random beef beer stew the other night.. it turned out well and was really tasty, except *ahem* it looked very much like dog poo :P Unfortunately, not everything that tastes good, looks good! Not to mention I'm far too lazy and can't be bothered to 'decorate' and arrange the food/plate nicely in order to take a pretty photograph. I never claimed to be a proper food blogger anyways, so what you see is what you get here ;)

The dish is pretty easy to make as everything gets thrown into a pot. Lovely comfort food and I reckon it's pretty tasty! And with the added cheese dumplings thrown in, you don't need to make a separate side carb dish to eat it with.. so it's literally a whole meal in a pot. Nice with a side of garden salad though :)

Sautee 1 small chopped onion, 400g beef cubes (coated in a bit of flour, salt/pepper),
handful of chopped cherry tomatoes on medium heat until browned

Add 3/4 cup beef stock gradually, 1/2 can of beer, 1 heaped tsp brown sugar.
Cover with lid, leaving a small gap. Stir regularly for the next 15 mins or so on low heat.

Add in chopped mushrooms and 1 large chopped carrot
Cover with lid, leaving a small gap. Stir regularly for the next 15 mins or so on low heat.

Mix together 50g self-raising flour, 1/2tsp baking powder.
Add in 25g melted butter, 1/2 whisked egg, 30g cheese. Form into balls.

Bring heat up to medium. Place dumpling balls on top of stew.
Cover with lid, leaving a small gap. Leave to cook for 15 mins.
