HOMEMADE SPANISH OMELETTE

We randomly decided to make a Spanish omelette one morning for breakfast/brunch. The only thing was that we couldn't find Chorizo sausage in any of the supermarkets near us! So we swapped it for some smoked pork & garlic sausages and they turned out just as well. It's an easy dish that you can mix and match whatever you want in there.

Better yet, the exact same ingredients can be re-used to cook up a pasta (just toss it in with some pasta sauce) or on top of a home-made pizza. Which makes it an excellent meal that's easily translatable. I LOVE meals like that :)

All the ingredients


Brown the onions in some oil, and toss in chopped Chorizo sausage (I used smoked pork and garlic ones)
and mushrooms. Cook on medium heat until brown.


Add in the cherry tomatoes and diced capsicum (I used yellow, red and green capsicums) mid-way


Beat the eggs (2 per person) with the cheese (I used soft cream cheese) and salt/pepper. Add in.


Finally, sprinkle some shallots


Done!
