mmmm.... I have a new favorite salad.

Iceberg wedge in the center of the plate.
Thinly sliced tomato wedges in a circle around the perimeter with a few croutons if you please.
Sauteé some porcini and crimini mushrooms in 1 Tbs olive oil, 4-8 Tbs. Balsamic Vinegar, salt and a shake of Prodhomme's pasta seasoning to taste.
Boil the mushroom mixture until it smells really pungent, stirring frequently.
Drizzle some of the reduction over the tomatoes and pile the tomatoes with the rest on top of the iceberg wedge.
Top with parmesan and reggiano.
Yum.
