Thanksgiving help!

So, my mother has asked me to make the Thanksgiving stuffing (as well as a pie - not pumpkin). I'm quite honored to have been given this task, and I have been perusing stuffing recipes for the past couple of days, trying to find one that is "just right." I now need your help in deciding which one to make!

A couple bits of information first:
- My sister and her fiance are vegetarian, so whatever I make must be meat-free (though those recipes with sausage or bacon are quite tempting!)
- I have been instructed that I am allowed to make "weird" stuffing and don't have to stick to the traditional (in my eyes, boring) type.
- A traditional dish for our family Thanksgivings is something called "filling" - which is essentially mashed potatoes and (regular - seasoned bread)) stuffing mixed together and cooked in a crockpot for awhile. It's really good (and full of carbs) and may satisfy those who crave the traditional stuffing. My uncle will be bringing this dish.

That being said, here's my options:
1. Cornbread Cranberry Stuffing - this is from a Weight Watchers cookbook but has gotten fairly high praise. I think it sounds pretty good but I am a little nervous about the cornbread and making it come out right.

2. Fennel and Apricot Stuffing - from Real Simple, again, I think it sounds fantastic but my mom thinks that fennel might turn some people off. She has pretty much nixed this one but I might be able to talk her into it.

3. Bread Stuffing (this includes either pine nuts or walnuts, and then optional sage and chestnuts, or mushrooms) - from How to Cook Everything, this is a more traditional stuffing (until you add the chestnuts I suppose), that calls for 2 sticks of butter. The recipe even says not to substitute for the butter because it just doesn't taste as good.

4. The Unknown - anybody have a FANTASTIC stuffing recipe, meat and cheese free, that is a little weird, especially anything that has fruit in it? Looking for something you have had and truly love.

I totally could eat all of these, in one sitting, I think they all sound great. That's why I need your help, everyone!
