Hm... Maybe sub for the beef red lentils, slightly precooked but not quite to the falling-apart stage, with something to add some umami, say, fermented black beans? Or instead of the red lentils, some other relatively delicate dal, like moong dal? My sister would probably have some good ideas.

Adding to the suggestions simply because to my personal taste, most meat substitutes are naaasty. My family gave up meat for Lent at my sister's urging back when I was eight or so, and my mother didn't really know how to cook balanced meals without a meat substitute, so we sampled a lot. Part was probably my youngsterish finicky eating habits, but I thought all vegetarian food was unpalatable for years, and was astonished and delighted the first time I had a veggie burger that was made out of things like grain and mushrooms and cheese that wasn't trying to be meat. That was right before college. Yup, one month turned me off of things labeled "vegetarian" for ten years...

And yes, the runzas sound fantastic. Thanks for posting the procedure! I'll definitely be trying them. Sometime when I'm less stressed, and have a nice free weekend day. Hah. :-)
