This recipe is one I did in July with fresh vegetables from the market anf fresh cheese goat. A real joy! Most of the interest of this sandwich came from the whole wheat nut bread I made.
(I left the location in Chile because if not you would think I took a flight to go back just to make a sandwich).


Vegetarian sandwich made out of a whole wheat nut breads: 1/2 tomato, 1/4 courgette, 50g of fresh goat cheese, 1/4 of red pepper, 3 tbsp of houmous, 2 slices of whole wheat nut bread, 1 tbsp of oil.

Cut the vegetables into slices.
Spread the houmous on one slice of bread, and the cheese on the other slice.
In a medium heated pan, seize the vegetables in olive oil.
Put the vegetables on the houmous.
In a George Foreman-style grill cook the sandwich.
Cut it in two and enjoy!

Most of the flavour of this sandwich is due to the bread which is really great.

Whole wheat bread with nuts: 100g of cereal flour, 50g of buckwheat flour, 300g of rye flour, 300ml of water, 1 tbsp of olive oil, 2 tbsp of sugar, 1,5 tsp of salt, 1,5 tps of dried yeast, 80g of nuts.
