Saturday Night Cooking Experimentation

Because I am not legally old enough to drink and have no life during the school semester.

Okay so abandon your expectations at the door, these are not your regular pancakes with a slightly orange juice taste (yes I am talking about you banana pancakes, you may leave the room now) they are a full out taste experience.

List Time!

1 box of pancake mix (I had about half a box left so I used it accordingly of course you could always make pancakes from scratch but I only go so far in my pancake love)
Orange Juice (substituted for water on the box, I used Florida's Natural w/o pulp and added calcium, I think next time I'll go for a more generic one as I'd rather drink my expensive juice. I also used about 1 1/2 cup)
2 eggs (accordingly I used only one with my half a box)
A pinch of nutmeg (I sub cinnamon as I couldn't find nutmeg)

Dump into a large mixing bowl and mix. The batter will be a yellowish color and be quite thick. The egg makes it more into an actual cake batter than the normal pancake batter you're used to (I probably could have used a tad more orange juice but it sufficed). Prepare the frying pan as normal but I would recommend that you keep it at a low heat because these pancakes are *quite* thick and the outside will burn before the inside is even cooked.

I recommend using a ladle to... well ladle your pancakes onto the pan as I tried to use my stirring implement and then had to switch to save myself a headache. Like I said before, these are thick pancakes (then again I really like the thin ones myself so *shrug*) and also more suited to the silver dollar shape. The taste of these pancakes should be warned about as they aren't particularly sweet and if you prefer it a bit sweeter I'd recommend using syrup on them as it counteracts that taste well.

The half of a box managed to fill up three adults and made about 9-10 pancakes. =)

La~!
