Spiced apple & apricot cake

I promised this to denorios last week... better late than never honey :) Happy baking to anyone who wants to try it out!



Spiced apple and apricot tea loaf

Ingredients

115g/4oz butter softened, plus extra for greasing
140g/5oz light muscovado sugar
2 eggs, beaten
100g/3.5oz no-soak dried apricots (‘ready-to-eat’ apricots)
2 eating apples, peeled and coarsly grated
2 table spoons of milk
225g/8oz self-raising flour
1 teaspoon mixed spice
.5 teaspoon ground cinnamon

Method

1. Preheat oven to 180oC/350oF/ gas mark 4. Grease and line the base and ends of a 900g/2lb loaf tin. Place the butter and sugar in a bowl and beat until light and fluffy, then gradually beat in the eggs.

2. Reserve 25g/1oz of the apricots, then fold the rest into the creamed mixture with the grated apples and milk. Sift in the flour, mixed spice and cinnamon and fold into the mixture.

3. Spoon into the prepared tin and sprinkle over the reserved apricots. Bake in the preheated oven for 55-60 minutes, or until risen and a skewer inserted into the centre comes out clean. Leave to cool in the tin for 10 minutes, then turn out and peel off the lining paper. Transfer to a wire rack to cool completely.

My notes - I used water instead of milk and it was nicer. Also, I put all the apricots into the mixture and none on the top. Another thing - I got the non-stick loaf tin in Tesco and it just needs a little greasing, no messy greaseproof paper needed ☺
