It's day 16 and I decided it was time to step away from Mexican cusine. At least for the night.
Last night I made my own version of nachos with Velveta, Rotel tomatoes, and refried beans. It was A-mazing. I ate it with chips and had more than one serving. Helen ended up not being satisfied with her dinner of leftovers, and soon we were both eating nacho-goodness. She didn't care too much for the rotel tomatoes (too spicy) but she was definitely all about the beans and chips.
I know, I'm a great mother to serve my toddler nachos.
Tonight I am making
turkey lettuce wraps. Scott and I had a version of this our first night in Hawaii and we just about died it was so good. When I was writing down ingrediants to get at the store, I missed the part where she talked about how good it would be with water chesnuts and green onion. I think I might have to go to the store and grab some today, because nuts in this dish do make it all the better.
The recipe calls for white wine. I didn't care to open a bottle, so I looked up
substitutions online. Do you know that you can use chicken broth or even just plain water as a substitution? Neither did I.
On a side note, what in the world is Gewurztraminer? Apparently you can make a substitution for it with grape juice.
I've got dinner started in the crockpot and a toddler just about ready to go down for a nap. I consider myself victorious, and I cannot wait to try this tonight!
