French Onion Tofu

Here's try #2. Last night I made dinner for 40 (with a good deal of help). the French Onion Tofu went over so well, I thought I'd post the recipe. Gee! This blogging stuff could get fun.

French Onion Tofu
(for six :-)
2 blocks tofu
2 huge onions
1/2stick butter
about 1 cup tamari soy sauce
1/2 t granulated garlic
1t fresh thyme (best) or 1/2t dried thyme
olive oil
3/4 cup grated parmesan cheese (not the powder!)

Oil a pan with sides well with the olive oil. Slice each tofu block into 4 or 5 slabs, abt 1/4 inch thick and place in a single layer in the pan. Bake in a 400 oven for about ten minutes while you mix the marinade. You want to make enough to just cover the tofu, mixing one part tamari to 5 parts water plus the granulated garlic. Pour the marinade over the tofu and contine baking at 400 until the marinade has evaporated and the tofu has begun to brown. (20min-1/2 hour)
Slice the onions as thin as you can get them without driving yourself crazy. Carmelize them in a frying pan (the "stick" variety) in the butter with a couple of teaspoons of olive oil to prevent immediate sticking. You want to get some dark brown sticking to the pan. When the onions have thoroughly cooked, add 1/2 cup of water and stir up the brown stuff to make a bit of a sauce. Add the thyme and tamari to taste.
Spread the onion mixture over the tofu, sprinkle on the cheese. Bake at 400 until cheese is browned (abt. 15 minutes) Serve with Pasta al Olio.

This can become Tofu Stroganoff if you add sour cream to the sauce, leave off the parmesan and sprinkle with paprika before serving. Enjoy!
