Also, a GREAT latke tip I received today in KosherMart - make your latkes using Yukon Gold potatoes. They have a much lower water content so you don't need to drain them as much. We made ours using the large grater and there was barely any liquid in the bottom of the bowl. Also, they don't turn grey while waiting to cook.
