Citrus Roast Chicken

This dish is satisfying, delicious and refreshing. Great served with salad and rice. Adapted from the Woman & Home festive food magazine.


Ingredients:
4tbsp marmalade
2tbsp olive oil
1tsp wholegrain mustard
1tbsp grated ginger
2 chicken thighs per person
5 clementines
1tbsp parsley

01. Pre-heat the oven to 160c fan.

02. Mix together the marmalade, olive oil, mustard and ginger. Take the skin off the chicken.

03. Put the chicken pieces in a large, glass dish. Pour over the sauce to coat the chicken.

04. Thinly slice the clementines and place over the chicken, pressing some slices in between pieces.

05. Cover with foil and place in the oven. Bake for 20 minutes. Remove the foil and bake for a further 40 minutes. Make sure the chicken juices are running clear. Sprinkle over the parsley and serve with rice and salad.
