It's Meat Free Monday! What is Meat Free Monday? Meat Free Monday is an environmental campaign to raise awareness of the climate-changing impact of meat production and consumption. Many people are unaware that livestock production is responsible for 18% of global greenhouse gas emissions - that’s more than the entire transport sector. Since, it is MFM, I've decided to share one of my easy peasy, oh-so yummy meat free recipes.

It's Not Easy Being Green Soup

1 can peas
1 can spinach
Vegetable broth (They sell it in cans, boxes, and mixes now. I can personally recommend Better Than Bouillon brand. Lovely stuff.)
Fresh ground sea salt and black pepper to taste

If using canned veg, dump the veg and broth in a blender. Blend until smooth. Pour into a saucepan. Heat. Season to taste. You can shave a bit of parmesean on the top when you serve. Try it with some lovely, crusty bread.

You can use fresh or frozen veggies in this, rather than canned. If using fresh or frozen veg, allow the veg to thaw in the fridge. Put veg and broth in blender, then continue as above.

Variation: Add curry powder to taste. Serve topped with a dollop of plain yogurt with Naan on the side.
