As requested on Facebook... I am posting it here. :) The original recipe is not low sodium, but I adjusted it and used the Soy Sauce Alternate (see below) instead of an entire cup of soy sauce, which would have sent me into sodium shock. :) I also like to add pea pods, bean sprouts, and mushrooms to this to really fill out the meal.
Edit: Also... for spiciness, I just add some red pepper flakes--adjust for your tastes.
Low-Sodium Mongolian Beef
2 T. oil, divided
4 garlic cloves, minced
1 T. freshly grated ginger (you can use jar ginger if needed)
1 c. soy sauce alternate (see below)
1/2 c. water
1/2 c. brown sugar
2# flank steak
2 T. cornstarch
1/2 c. green onions, sliced
2 c. cooked rice
Heat one tablespoon of oil in a medium sized sauce pan. Add garlic and ginger. Continue cooking for 2 minutes, then add soy sauce alternate and water. Bring to a boil and add brown sugar. Stir until sugar is dissolved. Remove from heat and set aside.
Slice flank steak into strips, cutting against the grain. Place beef strips in a bowl and toss with cornstarch to lightly coat.
Heat remaining oil in a large skillet over medium heat. Add beef and cook until well browned on each side, working in batches if necessary.
Pour soy sauce mixture into pan and add all of the beef. Cook 2-3 minutes then remove from heat. Add green onions. Serve warm over rice.
Soy Sauce Alternate
1 c. water
2 T. low-sodium beef bouillon
1 T. vinegar
1/2 t. oil
Pinch black pepper
Pinch mustard powder
Dissolve bouillon in hot water. Add other ingredients and mix well.
