not dead, just busy.
working on cupcakes for work cupcake contest.
coconut pound cake w/lemon curd filling and a ginger buttercream frosting.
right now I have the pound cake and the curd made. the cake isn't coconutty enough, but there's no way I'm baking another set of cakes. these are just fine. the cake is moist, tasty, and not too dense. the lemon curd is tart and tasty. the combo of the two is just out of this world. I hope the addition of the frosting is a good thing and not a bad!
