M83 (more electronica, but incredibly layered and good electronica)

not sure if tortoise is considered post rock. i think it falls more in the math rock insturmentals.

Still gonna say Tortoise is post-rock. It's a much more varied genre than just symphonic/classically based. Tortoise is more jazz based, especially Millions Now Living Will Never Die. More specifically Djed. The greatest 21 minute song ever written. Except for Side One of Thick as a Brick.
