They didn't specifically say why they eliminated the physical fight between Sam and Jake in favor of the cold overkill execution, but my guess would be that it was a combination of things, starting with a fistfight taking both more screen time and more shooting time, and maybe carrying a flavor of "been there, done that" after the fight between them in Part 1.

On the visions thing, I'll confess I was a bit surprised when Eric said what he did. I'd thought that the powers might continue independent of the demon, that they'd been something the children developed because of that little deomn blood diet. Guessing again, I suppose the thought was that the special children were just given a link to the demon through the demon's blood, and were in essence tapping into or sharing its powers, so that once the demon died, the powers were lost too. If that's the case, it takes away the easy potential of Sam deciding to take the risk of developing his powers to the point of being able to command demons in order to save Dean's life: he's going to have to find some other solution!
