The wave is one of the great things about riding a motorcycle *anywhere* - that feeling of belonging to a big family of sorts. Ari was thrilled for months after the day I told her that she was old enough to temporarily waive the "both hands on Daddy at all times while sitting on the bike" rule long enough to be the official wave-giver to oncoming riders.
I suspect that the wrist rocketeers, apart from any possible superiority complex, just aren't in the habit of lifting that hand off the clutch for any reason -'cause you never know when a sudden shift up >100mph might be required. But in general, I've been pleasantly surprised how universal the wave really is, between metrics and hogs, tourers and beaters, and even most of those matched-leather guys.
