Our family makes this a lot too, although some substitute Mexican cornbread for regular (I prefer the regular) and we use less eggs. It's sooooo yummy. I like to sprinkle a little shredded cheese on it before I eat it. Mmmmmm. I think I might suggest somebody make this for our Thanksgiving this year!

Yeah -- I offer a service for people where they can order by Friday and then on Monday their lunches are made and in their freezer/fridge at work. I'm slowly expanding so that it isn't just people at work, but keeping up with new entrees and side dishes is getting fun!
