Recipe to remember - Chicken and Mushrooms Alfredo over Haricot Vert (Two Servings)

Ingredients:

Two boneless, skinless chicken breasts
One package "baby bella" mushrooms
One package fresh French green beans (haricot vert) - usually enough for two people
Two cloves garlic
One cup Walden Farms Alfredo Sauce (http://www.waldenfarms.com/products/sauce_pasta.html)
Olive Oil Pam
Salt
Pepper

Chicken Preparation:

Slice each breast lengthwise to make two thinner breast halves.
**Alternate: Dice chicken into 1" cubes**
Coat lightly w/ fresh ground salt and pepper
Pan fry w/ Olive Oil Pam until done

Mushroom Sauce Preparation:

Finely dice two cloves garlic
Saute garlic in pan w/ Olive Oil Pam until dark brown (almost black)
Add mushrooms to pan and coat mushrooms w/ Olive Oil Pam
Add a small amount of fresh ground salt (1/4 - 1/2 tsp)
Cover and cook until tender, stirring occassionally
Once mushrooms are cooked, uncover and add Alfredo Sauce
Lower heat and simmer until sauce is hot

Serving Instructions:

Cook green beans per package directions (usually poke bag w/ fork and nuke for 3:45-4:00 minutes)

Place one half of green beans on each plate

Place two pieces of chicken (or equivalent, if chicken is cubed) over green beans

Ladle half of mushroom sauce over each plate
