Last week, I ate pasta almost every day, sometimes twice, due to work lunch outings. So this week, I really, REALLY did not want to set eyes or fork on a noodle. I saw this recipe for spinach soup on eatingwell.com's RSS feed in Google Reader (which, along with Google Calendar, Owns My Soul).
I thought the green soup looked really nice in the white bowl on the website. It didn't look quite as nice in my blue and purple bowls, but it was an excellent soup. The recipe was for 6 people as an appetizer. So, I made a half recipe for two people as a small main course, with a side salad. The croutons were very easy to make. I didn't bother with the measurement. I bought a mini baguette at Wegman's and made croutons of the whole thing, eyeballing the amount of rosemary and garlic, and it worked fine. I kept tossing croutons in my soup as I ate.
