While
tincow was away, I experimented in the kitchen. I bought some tofu and made my
nasty roasted tofu disaster with one half and this yummy soup with the other. I used instant dashi to make the broth, added some tofu, green onions, broiled shiitake mushrooms, and stirred in a few handfuls of baby spinach right at the end. I put some shredded daikon radish on top. It was pretty quick, and really good!
