This afternoon I'm making a sponge cake brushed with lemon juice and simple syrup and frosted and filled with rum-flavored Italian buttercream for a friend to bring to a party tomorrow.

Is it OK if the cake is never refrigerated? I don't want her to serve cold buttercream, but if the cake is brushed with something, I'd worry about the safety.

Secondly, how can I transport the cake? Normally I just put a bowl over the cake and put it in the backseat, but if I'm giving it to her and she's driving it, that wouldn't work. I don't have any boxes of the right size and shape on hand.
