I've been wanting to buy some of those 18x13 '
bakers half sheets' to use as cookie sheets because they're inexpensive and sturdy (and I like plain aluminum rather than fancy non-stick), but I'm not sure if they'll allow sufficient air/heat circulation in a home oven.
My oven seems to be about normal size - it's a bit over 22" wide and almost 17" deep, so there would be about 2" of space between the baking sheet and the oven walls on all sides. Is that enough? Do the 1" high edges impair circulation? I'm also looking at one like
this (flat edges, but big enough that there would only be 1" of space between the edges of the sheet and the oven)...would that allow enough room for air to circulate? I'm not sure what the parameters are with this.
