Bread pudding :)

I used the recipe off of the box of Rice Dream, my changes are in bold.
Recipe:
  • 1 lb. of bread (1 16 oz loaf) <- 8 or 9 buttermilk biscuits
  • 4 eggs, beaten
  • 2 egg yolks, beaten
  • 3 tbs. butter, softened
  • 1 1/2 cups sugar <- 1/2 cup brown sugar, 1/2 cup white sugar
  • nutmeg (I didn't measure)
  • cinnamon (didn't measure)
  • 3 cups (I used ~3.25 since I had a lot of bread, and the box was almost empty anyway) milk (I used vanilla rice milk)
  • 1/2 cup raisins (I used gold instead of regular)

Preheat oven to 375. Spray 13"x9" baking dish, tear bread into 1" pieces, and put in. Mix eggs, sugar, and butter. Add in milk, cinnamon, and nutmeg. Stir in raisins. Whisk until combined. Pour into dish, pat bread down (get it wet) to prevent burning. Let sit for 10 minutes. Cover with tin foil and bake for 35 minutes. Remove foil and bake for 30-40 minutes until top is golden.

The top came out crispy, the inside moist, and it tasted delicious.
