New with a question

Hello! I am new here and I don't see a set of rules, so I hope this type of question post is ok.

I'm just guessing here, but it looks as though is has some sort of raising agent in it, so if the ingredients list is true, my guess is they've essentially fermented the dough, like a sourdough; that they've mixed the coconut flour and water (and perhaps the pureed/grated fresh coconut and the salt) and left it for several days so that natural yeasts can set up shop and start raising it. Otherwise, I'm just not sure how they'd get the texture!

That is my guess too, they have to make a fermented starter (ala sourdough) to get that rise.
