This was my girlfriend's idea (in case we're in the Mad as Hell TV audience again this year... I gave Shaun Micallef a cake of himself last year) and was made for a party we threw. (I considered it practice in case we do want to give Shaun another cake). I baked this cake in a Dolly Varden tin - it's vanilla but I added pink food colouring so it would look like a ham.
I cut a piece off so it could lay on its' side, coated it in white chocolate ganache and then put two layers of RTR fondant. The first layer was marked in a tight square crisscross pattern, so that it would show through slightly on the second layer... which was scored like a real ham. This gave it the effect of having one of those string bags on it.
I then used my airbrush with various shades of brown (mostly caramel brown) to gently caramelize the "skin". After it dried, I went over the crisscrosses with the caramel brown again to make it look like the edges browned up, then went over it with flower glaze (an edible shellac) to make it look extra shiny.
The little black "peppercorns" are made from a mixture of gum paste and black fondant, as I found the black fondant by itself to be too soft to roll effectively. The pink ham is made from RTR fondant and the bone and marrow in the middle are gum paste. The knife and carving fork are real XD
