Dutch people love peanuts, it's everywhere: peanut butter (translated literally from Dutch it's actually peanut cheese), peanut sauce, peanut cookies.
So I decided to try to make the peanut cookies myself as they are one of my boyfriend's favorites. (I'm actually German, but I live in the Netherlands. When I bake, I'll use my German recipes.)
Ingredients
- 125 gr plain flour
- 60 gr cold butter
- 50 gr caster sugar
- 1 egg
- a dash of salt
- 50 gr (or more) peanuts
- 1 egg yolk beaten with a bit of cream
- dark chocolate
Directions
- Preheat oven to 180C.
- Knead flour, butter, sugar, egg and salt. let it rest for 15 minutes in the fridge.
- Roll the dough out and cut round cookies (cookie cutter of 8 cm diameter).
- Put it on the baking tray and brush it with egg yolk-cream mix.
- Put the peanuts on it and press them slightly.
- Bake the cookies for 20 minutes.
- Sprinkle melted chocolate on it.
What do you do with leftover melted chocolate and peanuts? Pindarotsjes (peanut rocks)!

As I know my boyfriend, the cookies won't survive Sunday. He's very un-Dutch when it comes to cookies. He won't just have one with his tea.
