Drunken Cherry Limeade Cupcakes

I've seen a ton of cherry limeade cupcake recipes and none of them looked quite like what I wanted. Neither do these. ;) Took my favorite vegan vanilla cupcake and limed it up. Alas, it got a little too wet - I should really have reduced the amount of milk to account for the extra lime juice. Oh, well, they're still highly, highly edible.

Cherry Pie Filling
2 cups pitted Bing cherries*
Lime juice
Kirschwasser
1/8 cup sugar*
1/8 cup corn starch

In a saucepan, heat cherries and splashes of lime juice and kirshwasser (I didn't measure, sorry, just went with my gut) until cherries release their juices, about ten minutes. Mix the sugar and corn starch together, stir into the cherries. Simmer until thickened to the consistency you want - thicker for pie, thinner for topping... Refrigerate after cooling.

*If you use sour cherries, you will need to adjust the sugar and if you adjust the sugar you'll have to adjust the corn starch. It's a bit "if you give a mouse a cookie..." ;)

Cake
1 cup coconut milk
1 tsp. apple cider vinegar
1¼ cups all-purpose flour
2 Tbsp. corn starch
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/3 cup canola oil
2/3 cup sugar
2 Tbsp. lime juice
Zest of 2 limes

Preheat oven to 350F. Line muffin pan or grease the wells - recipe makes 12 on the nose.

Add vinegar to coconut milk, let sit for ten minutes.
Mix milk, oil, sugar and lime juice/zest. Sift in flour, corn starch, bp, bs, and salt. Beat until no more lumps remain.

Fill cupcake liners about halfway. Add the cherry pie filling to the center, then fill the liners till they're about 3/4 full.

Bake for 20-22 minutes.

Lime buttercream
1/4 cup butter
2-3 Tbsp lime juice
zest of 1 lime
confectioner's sugar

Whip butter until fluffy. Add the zest, juice and the sugar in increments until you get a nice, fluffy consistency. If you want, add some green food coloring (I did).

You can see, my cherries sank. I figured they would, but you know what? Delicious whether or not they stick to the middle or settle on the bottom. *nods*



The verdict: worth the attempt to remedy the technical errors! I realized in transcribing the recipe that I totally shorted the baking powder and soda when I baked. Whoops.
