The first thing that springs to mind when baking something with buttermilk, is soda bread. I've only recently discovered sodabread, but I've been a fan since the first taste. It's a great way to make fresh bread, that's finished and ready to eat within an hour!
This is what you need:
- 300 gr plain flour
- 175 gr wholemeal flour*
- 1 tsp salt
- 2 tsp baking soda
- 400 ml buttermilk**
- 3 tbsp honey
- 150 gr pecans
- 200 gr dates***
*You could also use just plain flour
** Or a combination of 100 ml yoghurt and 300 ml milk
*** If you leave out the honey, pecans and dates you'll just have a plain soda bread. And you can also replace them with other dried fruits and/or nuts of your own choice.
This is how you make it:
Preheat the oven to 200 degrees celcius.
Toast the nuts in a dry frying pan. Mix the two flours and add the salt and baking soda. Chop the nuts and dates roughly, add them to the flour and stir them in. Pour in the buttermilk and the honey and quickly stir it until it's all combined. Don't overmix it, it just needs to form a ball, it doesn't matter if there's still lumpy bits in there. Shape it into a ball and put it on a baking tray. Score a quite deep cross over the top of the dough. Bake it for about 30-35 minutes, and then leave to cool for at least 15 minutes before you tuck in.
