This morning while clearing out the freezer I came to the realization I have too many bananas sitting around in there.
After a fairly busy weekend, I didn't have the energy to do a cake so I got rid of some of them on a loaf:
2 bananas
2 eggs
3/4 cup sugar
2 cups flour
1 tsp salt
1 tsp baking soda
was the recipe I went with. Since I have a bunch of bananas floating around, I decided to follow this exact and see how it goes, though my inclination was th throw a bit of cinnamon, nutmeg, and maybe some mixed spice in there as well.
What do you folk reckon? what's your preferred version of this basic classic?
