Cranachan Cupcake

I know its a little late to post something I made for Burn's night (almost a month late!) but I figured its better late then never! As I said I made some cupcakes for Burn's Night and keeping to the Scottish Theme, I made some Cranachan Cupcakes.


Ingredients:

  • 12 Vanillia Cupcakes
  • 350g Double Cream  (you could also use mascarpone)
  • 2 tbp honey
  • 5 tsp whisky
  • 1 jar raspberry jam
  • caramelised toasted oatmeal

Method:

  1. Whip your cream till it forms soft peaks.
  2. Add honey and 2 tsp whisky and continue to whisk.
  3. Taste the cream and add more whisky or honey if desired. Don’t add too much liquid the cream your you will end up with a sauce!
  4. Using a teaspoon, mix up you raspberry jam i.e open your jar, put your teaspoon into the jar and mix.
  5. Now add the remaining whisky to the jam and mix.

Assembly:

  1. Using the cone method, make a hole in your cupcakes for your jam.
    Google ‘cone method cupcakes’ if you don’t know what this means.
  2. Fill your cupcake with 1tsp jam and put the top of the sponge back on.
  3. Pipe or spoon on the cream and top with caramelised oatmeal.
