Ok so the other day i made a cheesecake base out of some biscuits i'd made that didn't quite work out as planned! I really really couldnt be bothered with the time and effort of making a cheesecake, plus having to buy extra things like cream and chocolate etc etc so i worked with what i had! This was a complete experiment and turned out absolutely fabulously delicious!
250g cream cheese (softened)
3/4 cup icing sugar
70g marshmellows.
Beat the cream cheese and icing sugar until smooth. Melt the marshmellows in the microwave until all runny and gooey. Mix the marshmellows in with the cream cheese mixture. Pour over base and put in the fridge to set.
Done!
I was thinking about variations today and thought that some melted dark chocolate swirled through, or some caramel sauce swirled through could be delicious as well.
